Ingredients

  • Tri Tip (Bottom Sirloin)
  • SWEEETHEAT™ HOMESTYLE SPICES & RUBS: Savory Flavory Medley™
  • Pecan Wood Chunks
  • Apple Wood Chunks

Instructions

  • Generously apply SWEEETHEAT™ HOMESTYLE SPICES & RUBS: Savory Flavory Medley™ over the Tri Tip.
  • Prepare a smoker for 350°F indirect cooking, using pecan and apple hard wood chunks.
  • Cook Tri Tip to an internal temperature of 135°F.
  • Place the meat on the grate right over the hot coals and sear the roast for about 5 minutes, turning several times to ensure even browning
  • Remove the Tri Tip from the grate and cover with foil.
  • Rest for 10-15 minutes before slicing against the grain.
