  • Let the rubbed boneless turkey breast sit at room temperature while you fire up the smoker.
  • Prepare a smoker for 240°F indirect cooking, using apple hard wood chunks.
  • Cook boneless turkey breast, for 3 hours at 240°F or until an internal temperature of 160°F.
  • Remove the boneless turkey breast from the smoker, cover loosely with aluminum foil, and let rest for 20 minutes before serving.
