If you have been looking for an all purpose rub that has a pleasant balance of sweetness, saltiness and spiciness then you can stop looking.  This all purpose rub recipe provides the balance of all the flavors that you were looking for.  The white and brown sugar provides the sweetness, the salt provides the saltiness and the spiciness comes from the black and cayenne pepper. Sprinkle in some paprika, ground cumin (I love cooking with cumin), that and chili powder, then you have a rub that can go on basically anything. Beef, chicken, lamb, pork, you name it, this all purpose rub has your covered.

We particularly use this all purpose rub on the smoked chicken wings we provide as appetizers.

We place the chicken wings in a bowl, apply the rub to the wings and then mix until it’s well blended together. We then place the chicken wings on the smoker. We smoke the wings at 300 degrees Fahrenheit (to ensure the skin gets crispy) until the chicken reaches an internal cooking temperature of 165 degrees Fahrenheit.  The smoking process normally takes an hour to an hour and half to completion. The wings provide the right balance of flavor that there is no reason to dip chicken wings with this rub into ranch or blue cheese dressing.

You can make this all purpose rub extra spicy by adding an additional teaspoon or two of cayenne pepper.  If you add too much cayenne, you can balance out the heat by adding some additional salt and sugar.

If you want to be adventurous, add some onion powder and/or celery salt to this blend.
