Pork Butt Preparation

Preparing pork can seem overwhelming at first, but it does not need to be. Preparing pork can be easy and fun if done correctly. The most important part of preparing pork but is ensuring you know how many pounds it is, so you know exactly what cooking time is appropriate. Once you know the weight, the rest is downhill. The recommended cooking time is 45 min per pound at around 350 degrees.

Where Do I Start?
But first, let us establish what methods you can use to prep your pork butt prior to cooking. Set your pork out on the counter 30 minutes before cooking, this allows it to warm up to room temperature which ensures an even cooking. During this time, preheat the oven to 350 degrees and begin to prep your spices. While completely up to you, I always recommend a simple salt and pepper base to start. Some tasty additions would be garlic powder, greek seasoning, or lemon pepper.

Rub down the pork butt but with selected spices and placed in roasting pan and add some liquid. The liquid options are endless, but usually range from chicken broth to apple cider. Depending on the spices you are using, consider branching out and trying something new. Place the pork in the oven for 45 min for every pound. While it is cooking, check the liquid in the pan and add water as needed. Continue cooking until pork reaches at least 180 degrees internally.

Golden Brown Perfection
During the last 10-15 min, turn the heat up to 450 degrees and allow the roast to become are dark brown on the outside. This will allow the inside to stay moist but the outside to be crunchy. Once it has reached that golden brown state immediately remove from oven and let sit for at least 20 minutes. While it sits, pour some of the drippings into a small saucepan with some cornstarch. Bring to simmer and stir frequently. Within a few minutes you will have perfect pork but gravy.
After resting, carve and serve. And voila! Instagram ready.
