The Meats

One of the main meats that is going to be used in Texas barbecue is brisket. Most Texans are going to prefer the fatty aide of the brisket because it has a lot more flavor. Pork ribs, sausage, turkey, beef ribs, and pulled pork are some of the other meats that you might find at a barbecue.

East Texas style

This style means that the meat is going to be cooked until the meat is falling off the bone. It is going to be cooked over some hickory wood. It is going to be marinated in a tomato sauce that is going to be very sweet. Plus you are going to be offered a lot of sides with your barbecue. Some of these sides might include potato salad, greens, fried okra, mac and cheese, cole slaw, and beans.

West Texas style

This meat is going to be cooked over a direct heat inside of a enclosed pit. Most of the time, the person is going to cook it usually a mesquite wood. You will rub the meat very heavily with some salt and pepper. You are going to need some patience because the meat will cook very slow.

Central Texas style

This meat is going to be rubbed with a variety of different spices. It is going to be cooked using a more indirect heat using a smoker. The wood that used in the cooking of this meat is a pecan or oak wood. This means that the meat is going to have a very smoky flavor to it.

South Texas style

This meat is going to be cooked in a thick sauce that is like molasses. This is one of the best ways to help keep the meat moist. In South Texas barbecue, they are known for cooking barbacoa. There are three main types of barbacoa. Barbacoa is made with the heads of the beef. Cabezita is the head of the goat. Tatema is the meat that is cooked over wood coals.
