
This marinated chicken recipe is a family favorite, especially for the toddler in my house. She is a picky eater. After eating something for the third time she is normally over it but that is not the case with this marinated chicken recipe. If she could have her way, she would eat this for dinner every night of the week.
This marinated chicken is easy to make. It follows the basic marinade formula fat + acid + flavor.
- Fat – Olive Oil
- Acid – Apple Cider Vinegar, Lime Juice, Lemon Juice
- Flavor – Brown Sugar, Salt, Pepper, Garlic, Mustard
You combine all the ingredients in a non-reactive bowl. Add the skinless chicken breast, cover and place in the refrigerator for 8 hours to 24 hours. Move your meat around while it’s marinating. Flip it once or twice so the marinade hits every single part. Remove the chicken from the marinade and either grill or pan fry the chicken. Cook the chicken to 165 degrees Fahrenheit. Let the meat rest for 5 minutes before serving.
This recipe is high in protein because of the marinated chicken breast. If you want even more protein in your dinner plans, serve this main dish with quinoa and spinach. If you want a more balance meal, serve with a starch, such as buttered garlic potatoes or brown rice and a vegetable, such as string beans.

Ingredients
- 1/4 cup cider vinegar
- 3 tablespoons prepared coarse−ground mustard
- 3 cloves garlic, peeled and minced
- 1 lime, juiced
- 1/2 lemon, juiced
- 1/2 cup brown sugar
- 1 1/2 teaspoons salt
- 6 tablespoons olive oil
- Ground black pepper to taste
- 6 boneless, skinless chicken breast halves
Instructions
- In a large, nonreactive container, thoroughly mix cider vinegar,
- whole grain mustard, garlic, lime juice, lemon juice, brown sugar,
- and salt.
- Whisk in olive oil and pepper.
- Place chicken in the mixture.
- Cover, and marinate chicken in the refrigerator 8 hours, or overnight.
- Preheat an outdoor grill for high heat, and lightly oil grate.
- Place chicken on the prepared grill, and cook 10 minutes per side, until no
- longer pink and juices run clear.
- Discard remaining marinade.
